Ingredients :
- 2 cups all-purpose flour
- 2½ tspn baking powder
- ½ tspn salt
- ¼ tspn ground ginger
- ½ cup brown sugar, packed
- 1 egg lightly beaten
- 1 cup milk
- ¼ cup vegetable oil
- ¾ cup crushed pineapple, drained
Preparation and Cooking Instructions :
- Preheat oven to 400°F and grease 12 muffin tins.
- In a medium bowl combine flour, baking powder, salt, ground ginger
and brown sugar.
- In another bowl combine egg, milk, oil and pineapple.
- Add wet ingredients to dry ingredients and stir just until moistened,
lumps are ok.
- Divide batter evenly among 12 greased muffin tins.
- Bake at 400°F for about 17-20 minutes or until done.
- Muffins should be firm to the touch. Remove from oven and let pan
rest 2-3 minutes then remove muffins to a wire rack to cool.
