Ingredients :

  • ½ lb bacon, diced
  • ¼ cups chopped onion
  • 2¼ cups unbleached flour, sifted
  • 3 tspn baking powder
  • ½ tspn baking soda
  • ½ tspn salt
  • 2 large eggs, slightly beaten
  • 1/3 cup milk
  • 1 cup dairy sour cream
  • sesame seeds


Preparation and Cooking Instructions :

  1. Fry bacon until crisp in skillet. Remove with slotted spoon and drain on paper towels.
  2. Sauté onion in 1 tbsp bacon drippings until tender (do not brown). Set aside to cool.
  3. Sift together flour, baking powder, baking soda and salt in large mixing bowl.
  4. Combine eggs, milk and sour cream in small bowl; blend well.
  5. Add all at once to dry ingredients, stirring just enough to moisten.
  6. Stir in bacon and sautéed onion.
  7. Spoon batter into greased 2½" muffin-pan cups, fill 2/3rds full.
  8. Sprinkle with sesame seeds.
  9. Bake in 375ºF. Oven 18 to 20 minutes or until golden brown.
