Barbecued beetroot with lemon creamy dressing

Ingredients :

  • 4 medium sized fresh beetroot
  • ¼ cup toasted sunflower seeds
    For the dressing :
  • 2 tspn grated lemon rind
  • 1 tbsp horseradish cream
  • ¼ cup orange juice
  • 1 cup plain unsweetened yogurt

Preparation and Cooking Instructions

  1. Wash beetroot and trim. Cut beetroot in half and microwave for 8 minutes or until; just cooked through.
  2. Cut into quarters and place on a greased barbecue grill and brown on all side.
  3. Remove and pour over lemon dressing. Scatter with toasted sunflower seeds.
  4. For dressing : Place lemon rind, horseradish cream, orange juice and yogurt in a bowl and combine.
