Ingredients :
- 4 medium sized fresh beetroot
- ¼ cup toasted sunflower seeds
For the dressing :
- 2 tspn grated lemon rind
- 1 tbsp horseradish cream
- ¼ cup orange juice
- 1 cup plain unsweetened yogurt
Preparation and Cooking Instructions
- Wash beetroot and trim. Cut beetroot in half and microwave for 8 minutes
or until; just cooked through.
- Cut into quarters and place on a greased barbecue grill and brown
on all side.
- Remove and pour over lemon dressing. Scatter with toasted sunflower
seeds.
- For dressing : Place lemon rind, horseradish cream, orange
juice and yogurt in a bowl and combine.
