A classic soup made extra special with the addition of macaroni

Ingredients :

  • 30g (1oz) butter or margarine
  • 1 small onion, peeled and chopped
  • 1 small green pepper, cored, seeds removed, and chopped
  • 1 tbsp flour
  • 1 lt. (2 pints) brown stock, or water plus 2 beef stock cubes
  • 450g (1lb) tomatoes, chopped
  • 2 tbsp tomato purée
  • 120g (4oz) short-cut macaroni
  • 1 tbsp grated horseradish
  • salt and pepper
    for garnish :
  • 2 tbsp sour cream
  • 1 tbsp chopped parsley


Preparation and Cooking Instructions :

  1. Heat the butter in a pan. Cover and cook the onion and green pepper for 5 minutes. Add the flour and stir.
  2. Add stock, tomatoes and tomato purée. Simmer for 15 minutes. Purée soup and pass through a sieve.
  3. Return to pan, and season with salt and pepper to taste. Add macaroni 10 minutes before serving. Simmer and stir occasionally. Add horseradish before serving.
  4. Garnish with sour cream and parsley. Serve immediately.
