Ingredients :
- 2 x 200g blocks milk chocolate, chopped
- 1 x 200g block dark chocolate, chopped
- 1 x 250g packet white marshmallow, halved
- 1 x 240g packet Scorched Almonds, halved
- 1 x 100g packet red glacé cherries, coarsely chopped
- 1 x 150g packet Cherry Ripe, chopped
- ¼ cup shredded coconut, toasted
Preparation and Cooking Instructions :
- Grease a 20cm x 30cm lamington pan; line base and two long sides with
baking paper.
- Combine milk and dark chocolates in a medium heatproof bowl. Place
bowl over a small pan of simmering water; stir until smooth.
- Combine marshmallows, scorched almonds, cherries and cherry ripe in
a medium bowl; mix well. Working quickly, stir in warm chocolate mixture;
spoon into prepared pan, pressing down slightly. Sprinkle top with shredded
coconut. Cover; refrigerate for several hours, or until set.
- Chop Rocky Road into pieces before serving.
