Serves : 2 cups
Ingredients :
- 3 tbsp vegetable or olive oil
- 2 cloves garlic, minced
- 1 finely diced onion, finely diced
- 1 celery stalk, finely diced
- ½ green capsicum, finely diced
- 3 lb tomatoes, peeled, seeded and chopped
- 1 tspn dried oregano leaves
- 1 tspn dried thyme leaves
- 1 tspn dried basil leaves
- 1 tspn salt
- ½ tspn cracked black pepper
- 1 tbsp Worcestershire sauce
- ¾ cup tomato paste
Preparation and Cooking Instructions
- In a large pot, heat the oil. Sauté the vegetables until tender.
Add the tomatoes, seasonings, Worcestershire sauce and tomato paste.
Reduce heat and simmer for 2 hours, or until sauce is very thick, stirring
occasionally. Cool before using.
