Orecchietti Pasta with Lamb and Peas

Ingredients :

  • 2 tbsp olive oil
  • 1 medium (150g) brown onion, chopped finely
  • 1 clove garlic, crushed
  • 600g lamb mince
  • 2 fresh red chilies, seeded, sliced thinly
  • 500g orecchietti pasta
  • 2 cups (300g)shelled fresh peas
  • 3 medium (570g) tomatoes, seeded, chopped finely
  • ¼ cup (80ml) extra virgin olive oil
    for Gremolata :
  • ½ cup finely chopped flat-leaf parsley
  • 1 clove garlic, crushed
  • 2 tspn finely grated lemon rind


Preparation and Cooking Instructions :

  1. Heat the oil in a large frying pan. Add the onion and garlic, cook, stirring, until soft. Add mince and chili ; cook, stirring, for about 10 minutes or until mince is well browned. Cover to keep warm.
  2. For Gremolata : Combine all ingredients in a small bowl.
  3. Meanwhile, cook the pasta in a large saucepan of well-salted boiling water, uncovered, until just tender. Reserve ¼ cup (60ml) of the cooking liquid ; drain the pasta.
  4. Boil, steam or microwave the peas until tender ; drain.
  5. Toss pasta in a large bowl with mince mixture, peas, reserved liquid, tomatoes and oil. Season to taste with salt. Serve sprinkled with Gremolata.
