Chocolate Ice Cream
1/2 pint custard
1/2 pint double or whipping cream
4oz plain chocolate 
3oz sugar
  • Make custard as directed on the packet
  • When the custard is still hot, break the chocolate into pieces and mix it with the custard until it has melted
  • Pour the cream and sugar into the chocolate custard and mix together
  • Leave the mixture to cool down
  • When cool taste and adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen

Vanilla Ice Cream
1/2 pint custard  
1/2 pint whipping or double cream
3oz sugar
2 tsp vanilla essence
  • Make custard as directed on the packet, leave to cool down
  • Pour the cream, vanilla essence and sugar into the custard and mix together
  • Taste and adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen

 Banana Ice Cream
2 ripe bananas
1/2 pint custard
1/2 pint whipping or double cream
3oz sugar
  • Make custard as directed on the packet, leave to cool
  • Puree the bananas in a bowl
  • Put the cream, bananas and sugar into the custard and mix together
  • Taste and adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen

Orange Sorbet
1/2 pint fresh orange juice
zest of two oranges
Juice 1 lemon
8oz sugar
  • Put sugar, water and orange zest in saucepan, heat gently until sugar has melted
  • Bring to boil for 5-8 minutes, remove from heat and allow to cool
  • Once cooled stir in orange and lemon juice
  • Adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen

Lemon Sorbet - Follow orange sorbet instructions, use zest of 1 lemon instaed of 2 oranges

Strawberry Ice Cream
1/2 pint custard
1/2 pint double or whipping cream
1lb fresh strawberries
3oz sugar
  • Make custard as directed on the packet and allow to cool
  • Pour the cream and sugar into the custard and mix together
  • Puree the strawberries in a liquidizer or blender, add to custard and cream mixture
  • Taste and adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen

Rum and Raisin Ice Cream
1/2 pint custard
1/2 pint double or whipping cream
3oz saltanas
3 tbsp rum
3oz sugar
  • Make custard as directed on the packet, leave to cool
  • Soak raisins in rum overnight or for several hours
  • Put all of the ingredients in a bowl and stir thoroughly
  • Taste and adjust sweetness if necessary, pour into an ice cream maker or put it into a pot in the freezer and stir the ice cream every half hour until frozen
