On your far left is what they called back then 'The Common Chinchilla' (Eriomys chinchilla)
The middle one is "The smaller chinchilla" (Eriomys Lanigera) and the near right animal is "Cuvier's Lagoti"(Lagidium cuvieri) a member of the chinchilla family, larger, the size of a rabbit and very long ears says the description!


A CARL HOFFMAN COLOUR PRINT (HAND COLOURED)

This print is a rather unusual print in itself, not only is it a very early print dating back to 1848-64 (from an early German edition book) but obviously the artist had never seen a chinchilla before! 
In those days, some artists generally had to rely on the person who had actually seen the animal and tried to give them a 'description' of what it looked like, although some artists did travel and paint 'on first hand' - in general - without a stuffed replica to return home with - the memory could fail them!
The chinchillas are very amused at the 'banding' on the grey one - they have never seen a 'fancy' chinchilla like that before...and as for that tail.....
The description the viewer may off said:
"...errrrrmmm, it looks like a rat - but a squirrels body...err...chubby bottom and the
ears...gosh...i can't remember if they were like rats or rabbits...tell you what...give it rats ears and as for the colour - white tummy! yes! ...that's it and a strange black or dark banding on the sides....can't remember if it had two...."
